DO AHEAD POTATO PUFF

6 med potatoes, peeled
-
1 tsp dry mustard
-
3/4 cup half & half
-
1/4 cup butter
-
1/4 cup minced onion
-
1/3 cup grated sharp cheddar cheese
Cook potatoes in boiling salted
water until tender. Drain well.
Beat or mash potatoes, just until
smooth. Add next four ingredients and beat until fluffy. Then,
add cheese and onion, mix lightly. Spoon into a greased 1 1/2
quart casserole.
Bake in preheated 365°
degree oven for 50 to 60 minutes. Can be prepared ahead of time
and refrigerated. Bake a full 60 minutes.
